I am experimenting with making my own vinegar for weed control. I use my Mr. Beer (2 gallon size) batch residue for the yeast and added 2 lbs of sugar. This ferments for 2 weeks and then I added 1/2 cup of Organic vinegar with Mother from the Health Store. This should have the vinegar bacteria and I will let this ferment for 2-4 weeks. I plan to test acid value to determine strength.
So far, I have $2.20 in the batch to make 2 gallons.
Normal 10% organic vinegar sells for around $9.00/gl.
I usually need 2 gallons per summer to treat weeds.
I will update this post with the results.

Sounds intriguing!

How do you stabilize it once it is finished brewing? Or does it hit a level and stay put if you remove most of the mother (and use it for another batch)?

The bacteria are self limiting and will die if the acid concentration gets too high or oxygen too low. I will remove a little mother for the next batch and simply jug it up. It will keep as long as the cap is tight.

Vinegar strength is now at 9-10% so I will bottle it up as I have applied it to weeds and it killed in 2 days. I added 2 oz of orange oil ($15/QT) to each gallon so total cost per gallon is about $2.00.
I am enjoying my backyard now watching the weeds die from my homeade vinegar while having a homemade beer!
Microbes are great!

Just an update on vinegar use this summer. Total cost for 4 gallons- $8.00.
It was all I needed for the weeds. I also used a gallon on my yard during fertilizing.
I am keeping 1 gallon over the winter so I do not have to make it until it gets hot enough to grow the vinegar bac at the recommended temperature.
